Description

Easter Bunny Bait is a delightful, festive snack mix combining popped popcorn, Rice Chex cereal, mini pretzels, and white chocolate. This sweet and salty treat is perfect for Easter celebrations, featuring pastel M&Ms and sprinkles that add a playful, colorful touch. It’s quick to prepare with simple melting and mixing, making it a kid-friendly holiday favorite or a charming gift option.

Ingredients

Scale

Snack Mix

  • 5 cups popped popcorn (plain or lightly salted)
  • 2 cups Rice Chex cereal
  • 1 cup mini pretzel twists

Chocolate Coating & Toppings

  • 1 1/2 cups white chocolate chips or white candy melts
  • 1/2 cup pastel M&Ms or candy-coated chocolates
  • 1/4 cup pastel sprinkles

Instructions

  1. Prepare Baking Sheet: Line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the popcorn, Rice Chex cereal, and mini pretzel twists, mixing gently to distribute evenly.
  3. Melt White Chocolate: Place the white chocolate chips or candy melts in a microwave-safe bowl and heat in 20-second intervals, stirring after each, until the chocolate is fully melted and smooth.
  4. Combine Mixture: Pour the melted white chocolate over the popcorn mixture. Gently toss everything together ensuring all pieces are evenly coated without crushing the popcorn.
  5. Spread and Decorate: Spread the coated mixture evenly onto the prepared baking sheet in a single layer for optimal setting. Quickly sprinkle the pastel M&Ms and sprinkles evenly over the top before the chocolate begins to harden.
  6. Set and Serve: Allow the mixture to cool and the chocolate to harden at room temperature for about 20 minutes, or place in the refrigerator briefly to speed up setting. Once set, break into pieces and serve immediately or package for gifting.

Notes

  • White chocolate can be substituted with almond bark or colored candy melts for different holiday themes.
  • For extra flavor and texture, try adding mini marshmallows, shredded coconut, or crushed cookies to the mix.
