Instructions
- Preheat Oven: Preheat oven to 425°F and place a large sheet pan inside to heat.
- Parboil Potatoes: Boil potatoes in salted water for 8–10 minutes until just fork-tender. Drain and let steam dry.
- Prepare Pan: Remove hot sheet pan, add duck fat to melt.
- Season Potatoes: Toss potatoes with rosemary, garlic powder, salt, and pepper.
- Roast: Spread potatoes on pan, roast for 35–40 minutes, flipping halfway, until golden and crispy.
- Garnish and Serve: Garnish with parsley and serve hot.
