Instructions

  1. Prepare Potatoes: Peel and cut the potatoes into chunks. Place them in a pot of salted boiling water and cook until they are fork-tender, about 15 to 20 minutes. Drain thoroughly and allow the potatoes to steam dry for a few minutes to remove excess moisture.
  2. Mash and Mix: Mash the cooked potatoes until smooth. Stir in 2 tablespoons of the butter and the heavy cream until the mixture becomes creamy. Then add the grated Parmesan cheese, salt, black pepper, and egg yolks, mixing thoroughly until well combined.
  3. Preheat Oven and Shape Potatoes: Preheat your oven to 400°F (200°C). Using a piping bag or spoon, form the potato mixture into decorative mounds or shapes on a baking sheet. Dot each mound with the remaining butter and sprinkle with sea salt to enhance flavor and texture.
