Instructions
- Prepare Potatoes: Peel and cut the potatoes into chunks. Place them in a pot of salted boiling water and cook until they are fork-tender, about 15 to 20 minutes. Drain thoroughly and allow the potatoes to steam dry for a few minutes to remove excess moisture.
- Mash and Mix: Mash the cooked potatoes until smooth. Stir in 2 tablespoons of the butter and the heavy cream until the mixture becomes creamy. Then add the grated Parmesan cheese, salt, black pepper, and egg yolks, mixing thoroughly until well combined.
- Preheat Oven and Shape Potatoes: Preheat your oven to 400°F (200°C). Using a piping bag or spoon, form the potato mixture into decorative mounds or shapes on a baking sheet. Dot each mound with the remaining butter and sprinkle with sea salt to enhance flavor and texture.
- Bake: Bake the potatoes in the preheated oven for 20 to 25 minutes or until the tops are golden brown and slightly crisp.
