Description

These Double Strawberry Sugar Cookies combine the sweet and tangy flavor of freeze-dried strawberries in both the cookie dough and the creamy strawberry icing. Soft, buttery sugar cookies are enhanced with real strawberry jam and powdered freeze-dried strawberries for an intense berry taste. Topped with a luscious cream cheese strawberry glaze, these cookies are perfect for any strawberry lover’s dessert table.

Ingredients

Scale

Cookies

  • 3 cups freeze-dried strawberries
  • 1 cup salted butter, room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/3 cup strawberry jam

Icing

  • 2 ounces cream cheese
  • 2 cups powdered sugar
  • 1/4 cup hot milk
  • 1 teaspoon vanilla extract
  • remaining freeze-dried strawberry powder (from pulverized strawberries)

Instructions

  1. Prepare Strawberry Powder: Using a blender, pulverize freeze-dried strawberries into a fine powder to be used both in the cookie dough and the icing.
  2. Preheat Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  3. Mix Dough: Cream together butter, sugar, and vanilla extract until the mixture is light and fluffy. Beat in the egg thoroughly. Gradually add flour, baking soda, part of the strawberry powder, and salt, mixing until just combined. Finally, blend in the strawberry jam to incorporate flavor and moisture.
  4. Shape Cookies: Roll the dough into evenly sized balls and arrange them spaced apart on the prepared baking sheet.
  5. Bake Cookies: Bake for 8 minutes initially. Remove from the oven and gently tap or press the baking sheet to flatten the cookies. Return to the oven and bake for an additional 2–3 minutes until edges are set and lightly golden.
  6. Make Icing: In a bowl, combine cream cheese, powdered sugar, hot milk, vanilla extract, and the remaining strawberry powder. Mix until smooth. Add extra hot milk if needed to achieve a drizzleable consistency.
  7. Decorate: Allow the cookies to cool completely before dipping them into the strawberry icing or drizzling the icing over each cookie for a glossy and flavorful finish.

Notes

  • For best results, use room temperature butter to ensure smooth creaming.
  • Freeze-dried strawberries can be found in specialty stores or online and add a concentrated natural strawberry flavor.
  • Adjust icing thickness with milk to suit your preference for dipping or drizzling.
  • Store cookies in an airtight container at room temperature for up to 3 days or refrigerate to extend freshness.
