Ingredients
Scale
Fritter Batter
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/3 cup whole milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon melted butter
- 1 1/2 cups fresh peaches, peeled and diced
- Vegetable oil for frying (about 2 inches in pot)
Glaze (Optional)
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Prepare Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg until evenly combined.
- Mix Wet Ingredients: In a separate bowl, whisk together whole milk, egg, vanilla extract, and melted butter until the mixture is smooth and homogenous.
- Combine Batter: Pour the wet ingredients into the dry ingredients and stir gently just until combined; be careful not to overmix to maintain a light texture.
- Fold in Peaches: Gently fold the diced fresh peaches into the batter, ensuring an even distribution throughout.
- Heat Oil: Pour about 2 inches of vegetable oil into a heavy-bottomed pot or skillet and heat it to 350°F (175°C). Use a thermometer to confirm the temperature for perfect frying.
- Fry Fritters: Carefully drop heaping tablespoons of batter into the hot oil, frying 2–3 fritters at a time to avoid overcrowding. Fry each side for 2–3 minutes or until the fritters turn golden brown and are cooked through.
- Drain Fritters: Use a slotted spoon to transfer the fried fritters to a paper towel-lined plate to drain excess oil.
- Prepare Glaze (Optional): In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth to make the glaze.
- Serve: Drizzle the glaze over warm fritters or dip them directly into the glaze. Serve immediately for best taste and texture.
Notes
- Best enjoyed on the same day for optimal freshness and texture.
- Fresh peaches can be substituted with canned (drained) or frozen (thawed and drained) peaches if fresh are unavailable.
- For extra flavor, add a pinch of ginger or cardamom to the dry ingredients.
