Description

These Delicious Cherry Pie Bites are a perfect bite-sized treat featuring a buttery pie crust filled with a luscious cherry filling. Easy to make and baked to golden perfection, these mini pies are ideal for parties, snacks, or a sweet surprise anytime.

Ingredients

Scale

Pie Crust

  • 1 package refrigerated pie crusts

Cherry Filling

  • 1 can cherry pie filling (about 21 oz)
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Topping

  • 1 tablespoon sugar (optional, for topping)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with mini muffin liners to prevent sticking.
  2. Prepare Pie Crust Circles: Unroll the refrigerated pie crusts and use a cookie cutter or a glass to cut out small circles approximately 2 inches in diameter.
  3. Thicken Cherry Filling: In a small saucepan, combine the cherry pie filling, cornstarch, and water. Heat over medium heat while stirring constantly. Continue cooking until the mixture thickens, about 3 to 4 minutes, then remove from heat and allow to cool slightly.
  4. Assemble Pie Bites: Place each pie crust circle into the mini muffin tin, gently pressing it down into the cups to form a small crust shell.
  5. Add Filling: Spoon a small amount of the thickened cherry filling into each pie crust shell, filling them evenly but not overflowing.
  6. Bake: Bake in the preheated oven for 15 to 18 minutes, or until the crust is golden brown and the cherry filling is bubbly.
  7. Optional Topping and Cooling: After baking, sprinkle the tops of the cherry pie bites with sugar if desired. Allow the bites to cool for a few minutes before removing from the tin and serving.

Notes

  • You can use premade pie crust to save time, but homemade crust works just as well.
  • The cornstarch thickens the cherry filling to prevent it from being too runny inside the mini pies.
  • Mini muffin liners make cleanup easier and help prevent sticking.
  • For an extra touch, consider adding a small dollop of whipped cream or a dusting of powdered sugar before serving.
  • Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate to extend freshness.
