Main Cake:

  • 1 cup pitted dates (chopped)
  • ½ cup hot brewed espresso
  • 1 teaspoon baking soda
  • ½ cup unsalted butter (softened)
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ¾ cup chopped walnuts

Optional Topping:

  • 2 tablespoons brown sugar
  • ¼ teaspoon cinnamon
  • ¼ cup chopped walnuts

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. Prepare dates: In a small bowl, combine dates with hot espresso and baking soda. Let sit for 10 minutes.
  3. Mix wet ingredients: Cream butter and brown sugar, add eggs and vanilla.
  4. Combine dry ingredients: Whisk flour, baking powder, cinnamon, and salt in a separate bowl.
  5. Combine mixtures: Alternate adding dry ingredients and date mixture to wet mixture. Fold in walnuts.
  6. Top and bake: Pour batter into pan, add optional topping, and bake for 35–40 minutes.
  7. Cool and serve: Cool before slicing and serving.
