Chicken Parmesan Soup:

  • 1 1/2 pounds boneless skinless chicken breasts
  • 4 cups chicken broth
  • 1 (14-ounce) can crushed tomatoes
  • 1 (8-ounce) can tomato sauce
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

To Finish:

  • 8 ounces penne or rotini pasta
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Prepare the Soup Base: Place chicken, broth, crushed tomatoes, tomato sauce, onion, garlic, Italian seasoning, basil, salt, and pepper in the crockpot. Cook on low for 6–7 hours or high for 3–4 hours.
  2. Shred the Chicken: Remove chicken, shred, and return to the crockpot. Stir in pasta and cook until tender, about 20–30 minutes.
  3. Finish the Soup: Add heavy cream, Parmesan, and mozzarella. Stir until melted and creamy. Garnish with parsley.

Notes

  • For extra flavor, sauté onions and garlic before adding them to the crockpot.
