- 2 cloves garlic (minced)
- 2 medium carrots (peeled and sliced)
- 2 celery stalks (sliced)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ teaspoon crushed red pepper flakes (optional)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 (14.5 oz) can diced tomatoes (with juices)
- 4 cups low-sodium chicken broth
Additional Ingredients:
- 1 pound boneless skinless chicken breasts
- 1 (16 oz) package potato gnocchi
- 3 cups fresh spinach (roughly chopped)
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
Instructions
- Sauté Aromatics: Heat olive oil in a skillet, sauté onion, garlic, carrots, and celery until soft.
- Prepare Soup Base: Transfer sautéed mixture to the crock pot. Add spices, tomatoes, broth, and chicken. Cook on low for 6-7 hours or high for 3-4 hours.
- Finish Soup: Shred chicken, return to pot, add gnocchi, spinach, cream, and cheese. Cook on high for 30 minutes. Serve hot.
Notes
- You can substitute chicken with Italian sausage for added flavor.
- For a lighter version, use half-and-half instead of heavy cream.
