  • 1 teaspoon salt

  • 1 (14.5 oz) can diced tomatoes (with juices)
  • 4 cups low-sodium chicken broth

Additional Ingredients:

  • 1 pound boneless skinless chicken breasts
  • 1 (16 oz) package potato gnocchi
  • 3 cups fresh spinach (roughly chopped)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese

Instructions

  1. Sauté Aromatics: Heat olive oil in a skillet, sauté onion, garlic, carrots, and celery until soft.
  2. Prepare Soup Base: Transfer sautéed mixture to the crock pot. Add spices, tomatoes, broth, and chicken. Cook on low for 6-7 hours or high for 3-4 hours.
  3. Finish Soup: Shred chicken, return to pot, add gnocchi, spinach, cream, and cheese. Cook on high for 30 minutes. Serve hot.
