Instructions

  1. Mix Ingredients: In a 6-quart or larger slow cooker, combine the browned ground beef, sliced potatoes, kidney beans, diced tomatoes, cream of mushroom soup, diced onion, minced garlic, kosher salt, dried oregano, and freshly ground black pepper. Stir all ingredients together thoroughly to distribute the flavors.
  2. Cook: Cover the slow cooker and cook the mixture either on HIGH for 4 hours or on LOW for 8 hours until the potatoes are tender and the casserole is heated through.
  3. Add Cheese: Uncover the slow cooker and evenly sprinkle the shredded cheddar cheese over the top of the casserole. Recover the slow cooker and cook for an additional 1 hour to allow the cheese to melt and become bubbly.
