Ingredients
Scale
For the Chicken:
- 4 boneless, skinless chicken breasts
- 2 cups shredded sharp cheddar cheese
For the Coating:
- 1 sleeve Ritz crackers (about 30 crackers), crushed
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
For Dredging:
- 2 large eggs
- 2 tablespoons milk
For Greasing:
- Nonstick cooking spray or melted butter
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with nonstick spray or melted butter.
- Prepare the Coating: In a shallow bowl, whisk together the eggs and milk. In a second bowl, combine the crushed Ritz crackers with garlic powder, onion powder, black pepper, and paprika. Place the shredded cheddar in a third bowl.
- Coat the Chicken: Pound the chicken breasts to an even thickness if needed. Dip each chicken breast first into the cheddar cheese, then into the egg mixture, and finally into the cracker crumbs, coating thoroughly.
- Bake: Place the coated chicken in the prepared baking dish. Lightly spray the tops with cooking spray or melted butter. Bake uncovered for 30 to 35 minutes until golden and crispy. Rest for 5 minutes before serving.
Notes
- For extra crispiness, broil the chicken for the last 2–3 minutes.
- Serve with mashed potatoes, green beans, or a side salad.
