Linguine Pasta:
- 12 ounces linguine pasta
Shrimp:
- 1 pound large shrimp, peeled and deveined

- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- 1 tablespoon lemon juice
- Chopped fresh basil for garnish
Instructions
- Cook Linguine: Boil linguine in salted water until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
- Sauté Shrimp: In a skillet, sauté shrimp in olive oil with salt, pepper, and red pepper flakes until cooked. Set aside.
- Prepare Sauce: In the same skillet, cook garlic and cherry tomatoes, then add spinach and sun-dried tomatoes. Pour in cream, Parmesan, Italian seasoning, and lemon juice. Simmer until thickened.
- Combine: Toss linguine and shrimp in the sauce. Add reserved water if needed.
- Serve: Garnish with basil and extra Parmesan. Enjoy!
