Indulge in the rich flavors of this Creamy Tuscan Shrimp Linguine, a delightful seafood pasta dish that combines succulent shrimp with a luscious cream sauce and vibrant tomatoes and spinach.

Ingredients

Scale

Linguine Pasta:

  • 12 ounces linguine pasta

Shrimp:

  • 1 pound large shrimp, peeled and deveined

Sauce:

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1 tablespoon lemon juice
  • Chopped fresh basil for garnish

Instructions

  1. Cook Linguine: Boil linguine in salted water until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
  2. Sauté Shrimp: In a skillet, sauté shrimp in olive oil with salt, pepper, and red pepper flakes until cooked. Set aside.
  3. Prepare Sauce: In the same skillet, cook garlic and cherry tomatoes, then add spinach and sun-dried tomatoes. Pour in cream, Parmesan, Italian seasoning, and lemon juice. Simmer until thickened.
  4. Combine: Toss linguine and shrimp in the sauce. Add reserved water if needed.
  5. Serve: Garnish with basil and extra Parmesan. Enjoy!
