Description

This creamy strawberry ice cream with fresh chunks is a delightful homemade treat perfect for summer. Made with fresh strawberries, rich cream, and a hint of vanilla, this dessert combines the natural sweetness of fruit with a smooth, velvety texture. The strawberries are macerated to enhance their flavor and mixed into a luscious ice cream base before being churned to perfection.

Ingredients

Scale

Strawberry Mixture

  • 2 cups fresh strawberries, hulled and chopped
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice

Ice Cream Base

  • ½ cup granulated sugar
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. Macerate the Strawberries: Place the chopped strawberries in a bowl and mix with ¼ cup of sugar and the lemon juice. Let the mixture sit for 20–30 minutes to macerate, which softens the strawberries and releases their juices. After this time, gently mash the strawberries a little to release more juice while leaving some chunks intact for added texture.
  2. Prepare the Ice Cream Base: In a separate bowl, whisk together the remaining ½ cup sugar, heavy cream, whole milk, vanilla extract, and a pinch of salt. Continue whisking until the sugar dissolves completely and the mixture is smooth and well combined.
  3. Combine Mixtures: Add the mashed strawberry mixture, including the juices and chunks, into the ice cream base. Stir gently to evenly incorporate the strawberries throughout the cream mixture.
  4. Churn the Ice Cream: Pour the mixed ice cream base into an ice cream maker. Churn the mixture according to the manufacturer’s instructions, which typically takes about 20–25 minutes, until it reaches a soft-serve consistency.
  5. Freeze Until Firm: Transfer the churned ice cream into a lidded container. Place it in the freezer for at least 4 hours, or until it hardens fully to a scoopable consistency.
  6. Serve: Scoop the creamy strawberry ice cream into bowls or cones. Optionally, garnish with additional fresh strawberries for a fresh, fruity finish.

Notes

  • For a deeper, more concentrated strawberry flavor, roast the strawberries at 375°F for 20 minutes before macerating them.
  • Substitute some of the strawberries with raspberries or blueberries for a delicious mixed berry variation.
