Instructions
- Cook the tortellini: Cook the cheese tortellini according to package instructions until al dente. Drain and set aside.
- Caramelize the onions: In a large skillet, heat 1 tablespoon olive oil over medium heat. Add the thinly sliced onion and cook, stirring occasionally, until they become golden brown and caramelized, approximately 15-20 minutes. Remove onions from skillet and set aside.
- Sauté mushrooms and garlic: Using the same skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the sliced mushrooms and cook until tender and browned, about 5-7 minutes. Add minced garlic and sauté for another 1-2 minutes until fragrant.
- Wilt the spinach: Reduce the heat to medium, then add the fresh spinach to the skillet. Cook just until wilted, stirring occasionally.
- Create the creamy sauce: Pour the heavy cream into the skillet and stir in the grated Parmesan cheese. Continue stirring until the cheese melts and the sauce becomes creamy. Season with salt and pepper to taste.
- Combine all ingredients: Return the cooked tortellini and caramelized onions to the skillet. Toss everything gently to evenly coat with the creamy sauce. Cook for an additional 2-3 minutes until the dish is heated through.
