Description

This Creamy Slow Cooker Cheeseburger Soup is a comforting and hearty recipe perfect for a cozy meal. Made with ground beef, tender potatoes, savory onions, and a rich blend of cheeses and cream, this soup simmers slowly to develop deep flavors. Topped with crispy bacon bits and fresh green onions, it mimics all the classic flavors of a cheeseburger in a creamy, luscious soup form.

Ingredients

Scale

Meat & Vegetables

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and diced

Liquids & Dairy

  • 3 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1/4 cup sour cream
  • 2 cups milk
  • 2 tablespoons butter

Others

  • 1/4 cup flour
  • Salt and pepper to taste
  • Bacon bits (optional)
  • Chopped green onions for garnish (optional)

Instructions

  1. Brown the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat and transfer the beef to your slow cooker.
  2. Sauté Onions and Garlic: Using the same skillet, sauté the diced onions and minced garlic for about 2-3 minutes until they become soft and fragrant. Add these to the slow cooker.
  3. Add Potatoes and Broth: Put the peeled and diced potatoes along with the chicken broth into the slow cooker. Stir everything together to combine the ingredients.
  4. Slow Cook the Soup: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender and the flavors meld.
  5. Prepare the Roux and Milk Mixture: About 30 minutes before serving, melt the butter in a saucepan over medium heat. Whisk in the flour to create a roux and cook it for 2 minutes, then slowly whisk in the milk. Continue to cook this mixture until it thickens.
  6. Combine Cream and Cheese: Stir the thickened milk mixture into the slow cooker, then add cheddar cheese, heavy cream, and sour cream. Mix well and cook for an additional 30 minutes until the cheese has fully melted and the soup has a creamy consistency.
  7. Season and Serve: Taste the soup and add salt and pepper as needed. Serve hot, garnished with optional bacon bits and chopped green onions for added flavor and texture.

Notes

  • You can substitute ground turkey or chicken for a lighter version of this soup.
  • For a thicker soup, mash some of the potatoes before adding the dairy mixture.
  • Make sure not to skip sautéing the onions and garlic as it adds depth of flavor.
  • Leftovers store well in the fridge for up to 3 days and can be reheated on the stovetop or microwave.
  • Feel free to add more cheese or cream to your desired creaminess level.
