Mushrooms:
- 16 large white mushrooms, stems removed and cleaned
- 1 tablespoon olive oil
Shrimp Filling:
- 1/2 pound cooked shrimp, finely chopped
- 4 ounces cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 tablespoons mayonnaise
- 2 garlic cloves, minced
- 2 tablespoons finely chopped green onions
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon Old Bay seasoning or paprika
- Salt and pepper to taste
- Extra Parmesan for topping (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F. Grease a baking dish or line with parchment paper.
- Prepare mushrooms: Place mushroom caps stem-side up, drizzle with olive oil, and arrange in a single layer in the baking dish.
- Make filling: In a bowl, mix chopped shrimp, cream cheese, Parmesan, mayonnaise, garlic, green onions, parsley, Old Bay seasoning, salt, and pepper until smooth.
- Stuff mushrooms: Spoon shrimp mixture into mushroom caps, sprinkle with extra Parmesan if desired.
- Bake: Bake for 18–20 minutes until mushrooms are tender and filling is golden and bubbly. Serve warm.
