These creamy shrimp stuffed mushrooms are a delightful appetizer perfect for any gathering. Plump mushrooms filled with a savory mixture of shrimp, cream cheese, and seasonings, baked to golden perfection.

Mushrooms:

  • 16 large white mushrooms, stems removed and cleaned
  • 1 tablespoon olive oil

Shrimp Filling:

  • 1/2 pound cooked shrimp, finely chopped
  • 4 ounces cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons mayonnaise
  • 2 garlic cloves, minced
  • 2 tablespoons finely chopped green onions
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon Old Bay seasoning or paprika
  • Salt and pepper to taste
  • Extra Parmesan for topping (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F. Grease a baking dish or line with parchment paper.
  2. Prepare mushrooms: Place mushroom caps stem-side up, drizzle with olive oil, and arrange in a single layer in the baking dish.
  3. Make filling: In a bowl, mix chopped shrimp, cream cheese, Parmesan, mayonnaise, garlic, green onions, parsley, Old Bay seasoning, salt, and pepper until smooth.
  4. Stuff mushrooms: Spoon shrimp mixture into mushroom caps, sprinkle with extra Parmesan if desired.
  5. Bake: Bake for 18–20 minutes until mushrooms are tender and filling is golden and bubbly. Serve warm.
