Ingredients
Scale
Chicken and Sauce
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
- 1 teaspoon Italian seasoning
Pasta
- 12 ounces fettuccine or pasta of choice
- 2 tablespoons unsalted butter
- Chopped fresh parsley, for garnish
Instructions
- Prepare the Chicken: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning, then cook until golden and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
- Sauté Garlic: In the same skillet, add the minced garlic and cook until fragrant, about 1 minute, being careful not to burn it.
- Make the Sauce: Add heavy cream and chicken broth to the skillet, stirring to combine. Bring to a simmer and cook for 5 minutes to let it thicken slightly.
- Add Parmesan: Stir in the grated Parmesan cheese until melted and well incorporated to create a creamy sauce. Taste and adjust seasoning with salt and pepper as needed.
- Cook Pasta: Meanwhile, cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain pasta and toss with butter to prevent sticking.
- Combine: Slice the cooked chicken breasts into strips and return to the skillet with the sauce. Add the cooked pasta and gently toss to coat everything evenly in the creamy Parmesan sauce.
- Serve: Garnish with freshly chopped parsley and serve warm. Enjoy your creamy, cheesy chicken pasta!
Notes
- Use freshly grated Parmesan for best flavor and to ensure smooth melting in the sauce.
- For a lighter version, substitute half-and-half for heavy cream.
- Adding steamed broccoli or sautéed mushrooms can add delicious veggies to the dish.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
- Make sure not to overcook the pasta so it maintains a perfect al dente texture when combined with the sauce.
