  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 tablespoon olive oil (Costabile Brand)

Pasta

  • 12 oz gluten-free farfalle pasta
  • ¼ cup reserved pasta water

Sauce

  • 4 tablespoon butter
  • 2 teaspoon dry shallots
  • 1 teaspoon garlic powder
  • 2 teaspoon Italian seasoning
  • 2 tablespoon Gluten-Free 1:1 Flour
  • ½ cup chicken broth
  • 3 cups heavy cream
  • 12 oz shredded parmesan
  • ½ teaspoon salt


Instructions

  1. Boil Pasta: Bring a large pot of salted water to a boil. Cook the gluten-free farfalle pasta according to the package instructions until al dente. Reserve ¼ cup of the pasta water before draining the pasta. Set pasta aside.
  2. Season Chicken: In a small bowl, mix together paprika, oregano, garlic powder, thyme, salt, and black pepper. Pound the chicken breasts to even thickness and season both sides generously with the spice mix.
  3. Sear Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and sear until golden brown and cooked through, about 5-7 minutes per side depending on thickness. Remove chicken from skillet and let rest.
  4. Prepare Sauce: In the same skillet, melt butter over medium heat. Add dry shallots, garlic powder, and Italian seasoning, stirring until fragrant, about 1-2 minutes. Sprinkle in the gluten-free flour and whisk continuously to form a roux, cooking for 1-2 minutes. Gradually whisk in chicken broth and heavy cream, stirring until the sauce thickens. Lower the heat and stir in shredded parmesan cheese until melted and smooth. Season the sauce with salt as needed.
  5. Combine: Add the cooked pasta and reserved pasta water to the sauce, tossing to coat the pasta evenly. Slice the rested chicken breasts into strips and nestle on top or mix into the pasta.
