- 1 tablespoon olive oil
- 1 pound ground Italian sausage (mild or spicy)
- 1 small yellow onion, diced
- 3 garlic cloves, minced
- 4 cups low-sodium chicken broth
- 2 cups Alfredo sauce
- 1 (14.5 oz) can diced tomatoes, undrained
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes (optional)
- 8 lasagna noodles, broken into bite-sized pieces
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it into crumbles.
- Add the diced onion and cook until softened, about 4 minutes. Stir in the garlic and cook for another 30 seconds.
- Pour in the chicken broth, Alfredo sauce, diced tomatoes with juice, basil, oregano, and red pepper flakes. Stir well to combine.
- Add the broken lasagna noodles and bring the soup to a boil. Reduce heat to a simmer and cook uncovered for 10 to 12 minutes, or until noodles are tender, stirring occasionally.
- Stir in the mozzarella, Parmesan, and heavy cream. Season with salt and pepper to taste. Cook for another 2 to 3 minutes until cheese is melted and soup is creamy.
- Garnish with parsley and serve hot.
