Ingredients
Scale
Cheese Mixture
- 8 oz cream cheese, softened
- 4 oz goat cheese, softened
- 1 teaspoon honey
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
Coating and Garnish
- 1/2 cup dried cranberries, chopped
- 1/2 cup shelled pistachios, chopped
- 1 tablespoon fresh parsley, chopped (optional for garnish)
Instructions
- Mix cheeses and seasonings: In a medium bowl, combine the softened cream cheese and goat cheese with honey, garlic powder, and black pepper. Mix thoroughly until the mixture is smooth and well combined.
- Shape and chill the log: Lay out a sheet of plastic wrap on your workspace. Spoon the cheese mixture onto the plastic wrap and shape it into a log. Wrap the log tightly with the plastic wrap and refrigerate for at least 1 hour to allow it to firm up.
- Prepare coating: On a large plate, mix together the chopped dried cranberries and chopped pistachios evenly.
- Roll the cheese log: Remove the cheese log from the refrigerator and unwrap it carefully. Place the log onto the cranberry-pistachio mixture and roll it gently so the coating sticks to the entire surface.
- Garnish and chill: If desired, sprinkle the cheese log with freshly chopped parsley for a pop of color and freshness. Return the log to the refrigerator and chill until ready to serve.
- Serve: Slice the cheese log and serve with crackers, crostini, or sliced baguette for a tasty appetizer.
