  • Salt and black pepper to taste
  • 2 cups chopped fresh spinach or kale (optional)
  • Juice of 1 lemon
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery and sauté until softened.
  2. Stir in the garlic, cumin, paprika, thyme, and red pepper flakes. Cook until fragrant.
  3. Add lentils, diced tomatoes, vegetable broth, and bay leaf. Bring to a boil, then simmer until lentils are tender.
  4. Remove bay leaf and stir in spinach or kale. Simmer until greens are wilted.
  5. Season with lemon juice, salt, and pepper. Serve warm, garnished with parsley.
