Description

Indulge in the rich and flavorful Cowboy Butter Chicken Linguine recipe that brings together tender chicken slices, al dente linguine, and a zesty, buttery sauce with a hint of spice. This dish is a perfect blend of comfort and sophistication, ideal for a cozy weeknight dinner or a special gathering.

Ingredients

Scale

Linguine Pasta:

  • 12 oz linguine pasta

Cowboy Butter Chicken:

  • 1 1/2 lbs boneless, skinless chicken breasts, sliced thin
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 6 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 cup grated Parmesan cheese (plus more for garnish)

Instructions

  1. Cook the Linguine: Prepare linguine according to package instructions until al dente. Drain and set aside, saving 1/2 cup of pasta water.
  2. Cook the Chicken: Season chicken with salt and pepper. Cook in olive oil until golden and cooked through. Set aside.
  3. Prepare the Cowboy Butter Sauce: In the same skillet, melt butter, then add garlic, Dijon mustard, smoked paprika, red pepper flakes, parsley, chives, lemon juice, lemon zest, and cayenne. Cook until fragrant.
  4. Combine and Serve: Add pasta and chicken to the skillet. Toss to coat in the sauce, adding pasta water if needed. Sprinkle with Parmesan and garnish with herbs.

Notes

  • You can use shrimp or steak instead of chicken.
  • Adjust spice levels to taste.
  • Leftovers reheat well with cream or broth.
