Description

A classic cowboy beans recipe that combines ground beef, bacon, and three types of beans in a flavorful sauce, perfect as a side dish or main course.

For the Cowboy Beans:

  • 1 pound ground beef
  • 4 slices bacon, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) pork and beans, undrained
  • 1/2 cup barbecue sauce
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste


Instructions

  1. Cook Bacon: In a large skillet, cook chopped bacon over medium heat until crispy. Remove and set aside, leaving 1 tablespoon of bacon grease in the pan.
  2. Brown Beef: Cook ground beef in the same pan until browned. Drain excess grease if needed.
  3. Saute Onions: Add diced onion to the pan and cook until softened.
  4. Add Ingredients: Stir in garlic, then add all beans, barbecue sauce, ketchup, brown sugar, mustard, chili powder, and cooked bacon.
  5. Simmer: Bring to a simmer, then reduce heat and cook uncovered for 20–25 minutes.
  6. Season and Serve: Adjust seasoning with salt and pepper. Serve warm.
