Garlic Soup:
- 2 heads of garlic (about 20 cloves)

- 1 tablespoon butter
- 1 large onion, thinly sliced
- 4 cups low-sodium chicken broth
- 2 cups water
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
- 1 bay leaf
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For Serving:
- 4 slices day-old crusty bread

Instructions
- Prepare Garlic: Peel and slice garlic cloves. Heat oil and butter in a pot, cook garlic until soft.
- Cook Onion: Add sliced onion, cook until translucent.
- Add Broth: Pour in chicken broth and water, add thyme, bay leaf, salt, and pepper. Simmer for 20 minutes.
- Blend Soup: Remove bay leaf, blend soup slightly with immersion blender.
- Serve: Toast bread, place in bowls, ladle soup over bread, top with cheese. Broil if desired.
