Description

Cornbread Taco Bake is a hearty and comforting Mexican-American casserole that combines seasoned ground beef or turkey, black beans, corn, and tomato sauce, all topped with a golden cornbread crust. Perfect for an easy weeknight dinner, it’s a delicious, cheesy dish that please the whole family.

Ingredients

Scale

Meat Mixture

  • 1 pound ground beef or ground turkey
  • 1 small onion, diced
  • 1 packet taco seasoning or 2 tablespoons homemade taco seasoning
  • 1/3 cup water
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 (8-ounce) can tomato sauce
  • 1 cup shredded cheddar cheese

Cornbread Topping

  • 1 (8.5-ounce) box cornbread mix (like Jiffy)
  • 1 egg
  • 1/3 cup milk
  • 1/2 cup shredded Monterey Jack cheese (optional)

Garnish (Optional)

  • Chopped cilantro
  • Sliced jalapeños

Instructions

  1. Preheat and Cook Meat: Preheat oven to 400°F (200°C). In a large skillet over medium heat, cook the ground beef and diced onion until the meat is browned and the onion is soft, about 6–8 minutes. Drain excess fat if needed.
  2. Add Seasoning and Simmer: Stir in the taco seasoning and water; simmer for 2–3 minutes to blend flavors.
  3. Add Beans, Corn, and Sauce: Add the black beans, corn, and tomato sauce, then cook for another 2 minutes, stirring well to combine. Remove from heat and stir in the cheddar cheese.
  4. Prepare Cornbread Batter: In a mixing bowl, combine the cornbread mix, egg, and milk until just blended, being careful not to overmix.
  5. Assemble Dish: Pour the meat mixture into a greased 9×9-inch or similar baking dish. Spoon the cornbread batter evenly over the top. Sprinkle with Monterey Jack cheese if using.
  6. Bake: Bake for 20–25 minutes or until the cornbread topping is golden brown and cooked through.
  7. Serve: Let cool for 5 minutes before serving. Garnish with chopped cilantro and sliced jalapeños if desired.

Notes

  • Add a dollop of sour cream or salsa on top for extra flavor.
  • This recipe can easily be doubled and baked in a 9×13-inch dish for larger crowds.
