Vanilla Glaze (optional):
- 1/2 cup powdered sugar
- 1–2 teaspoons milk
- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together butter, brown sugar, and granulated sugar until light and fluffy. Beat in eggs and vanilla.
- Whisk together flour, cornstarch, baking soda, and salt in a separate bowl. Gradually mix into wet ingredients.
- Chill the dough for 20–30 minutes.
- Prepare streusel by combining flour, brown sugar, and cinnamon. Stir in melted butter.
- Scoop portions of dough onto baking sheet, flatten slightly, and sprinkle with streusel.
- Bake for 10–12 minutes until edges are golden. Cool on a wire rack.
- Whisk together powdered sugar, milk, and vanilla for glaze. Drizzle over cooled cookies.
