Description

Coconut Pineapple Bites are a refreshing and tropical no-bake snack featuring fresh pineapple chunks coated in a luscious mixture of shredded coconut, Greek yogurt, and honey or maple syrup. This easy-to-make treat offers a perfect balance of sweet and tangy flavors, ideal for a light dessert or a healthy snack. Garnished with fresh mint leaves, these bites are chilled to enhance their texture and flavor, making them a delightfully cool option for warm days.

Ingredients

Scale

Fruit

  • 1 medium fresh pineapple, peeled and cut into bite-sized chunks

Coconut Coating

  • 1 cup shredded coconut (sweetened or unsweetened, based on preference)
  • 1/4 cup Greek yogurt (optional, for creaminess)
  • 2 tbsp honey or maple syrup (optional, for added sweetness)

Garnish

  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Prepare the Pineapple: Peel and cut the fresh pineapple into bite-sized chunks. Set any excess pineapple juice aside, and place the pineapple pieces in a mixing bowl to prepare for coating.
  2. Prepare the Coconut Coating: In a separate bowl, combine the shredded coconut with Greek yogurt and honey or maple syrup if using. Mix thoroughly until you achieve a cohesive and sticky mixture. For a simpler version, omit the yogurt and honey and use only shredded coconut.
  3. Coat the Pineapple: Using your hands or a fork, take each pineapple chunk and thoroughly coat it in the coconut mixture, ensuring all sides are evenly covered. For a lighter coating, simply roll the pineapple pieces in shredded coconut without the yogurt mixture.
  4. Chill the Bites: Arrange the coated pineapple bites on a serving platter or tray in a single layer. Place them in the refrigerator and chill for at least 30 minutes to allow the coating to firm up and the flavors to meld together.
  5. Garnish and Serve: Just before serving, garnish the bites with fresh mint leaves if desired. Serve the Coconut Pineapple Bites cold for a refreshing and delicious snack or dessert.

Notes

  • You can choose sweetened or unsweetened shredded coconut depending on your sweetness preference.
  • Greek yogurt and honey/maple syrup are optional but add creaminess and extra sweetness to the coating.
  • For a vegan version, use maple syrup instead of honey and plant-based yogurt or no yogurt at all.
  • These bites are best served chilled and consumed within 1-2 days for maximum freshness.
  • Excess pineapple juice can be used in smoothies or as a refreshing drink.
