Description

Deliciously chewy and sweet Coconut Macaroons made with shredded coconut, sweetened condensed milk, and egg whites. These delightful treats are baked to golden perfection and optionally dipped in melted semisweet chocolate for an extra indulgent touch. Perfect for a snack or dessert that is easy to prepare and sure to satisfy coconut lovers.

Ingredients

Scale

Macaroon Ingredients

  • 2 1/2 cups shredded sweetened coconut
  • 2/3 cup sweetened condensed milk
  • 2 large egg whites
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Optional Chocolate Dip

  • 1/2 cup semisweet chocolate chips

Instructions

  1. Preheat the Oven: Preheat your oven to 325°F (165°C) and prepare a baking sheet by lining it with parchment paper or a silicone baking mat to prevent sticking.
  2. Mix Ingredients: In a large mixing bowl, combine the shredded sweetened coconut, sweetened condensed milk, egg whites, vanilla extract, and a pinch of salt. Stir the mixture thoroughly until all ingredients are well incorporated.
  3. Shape the Macaroons: Using a tablespoon, scoop the mixture and shape it into small mounds or balls. Place them on the prepared baking sheet, spacing each about 1 inch apart to allow for even baking.
  4. Bake the Macaroons: Place the baking sheet in the preheated oven and bake for 15 to 20 minutes. The macaroons are done when the edges turn golden brown and they become firm to the touch.
  5. Cool the Macaroons: Remove the baking sheet from the oven and allow the macaroons to cool briefly on the sheet. Then, transfer them to a wire rack to cool completely, ensuring they set properly and maintain their shape.
  6. Optional Chocolate Dipping: If desired, melt the semisweet chocolate chips in a microwave-safe bowl or using a double boiler. Dip the bottoms of the cooled macaroons into the melted chocolate, then place them on parchment paper to let the chocolate set before serving.

Notes

  • For extra crispness, bake an additional 2-3 minutes but avoid overbaking to keep chewy centers.
  • Use unsweetened shredded coconut and adjust the amount of sweetened condensed milk if you prefer less sweetness.
  • Chocolate dipping is optional but adds a delightful contrast to the sweet coconut flavor.
  • Store macaroons in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • Can be frozen for up to 1 month; thaw before serving.
