  • 1 teaspoon brown sugar
  • 1 pound white fish fillets (such as cod or halibut), cut into chunks
  • salt and pepper to taste

Instructions

  1. Heat coconut oil: In a large pot over medium heat, sauté the onion until soft, about 3–4 minutes.
  2. Add aromatics: Add garlic, ginger, and red bell pepper, and cook for another 3–4 minutes.
  3. Combine ingredients: Stir in the coconut milk, fish broth, fish sauce, lime zest, lime juice, and brown sugar. Bring to a gentle simmer.
  4. Add fish: Add the fish chunks and simmer gently for 6–8 minutes until the fish is opaque and cooked through.
  5. Season and serve: Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro and lime wedges.
