Instructions
- Heat coconut oil: In a large pot over medium heat, sauté the onion until soft, about 3–4 minutes.
- Add aromatics: Add garlic, ginger, and red bell pepper, and cook for another 3–4 minutes.
- Combine ingredients: Stir in the coconut milk, fish broth, fish sauce, lime zest, lime juice, and brown sugar. Bring to a gentle simmer.
- Add fish: Add the fish chunks and simmer gently for 6–8 minutes until the fish is opaque and cooked through.
- Season and serve: Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro and lime wedges.
