Description

Delightfully rich and creamy Coconut Crème Chocolates made with sweetened shredded coconut, melted coconut oil, and powdered sugar, all coated in smooth dark or semi-sweet chocolate. These bite-sized treats combine tropical coconut flavor with luscious chocolate, perfect for a quick homemade indulgence or gift.

Ingredients

Scale

Coconut Filling

  • 2 cups sweetened shredded coconut
  • 1/4 cup coconut oil, melted
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Chocolate Coating

  • 8 oz dark chocolate or semi-sweet chocolate, for coating

Instructions

  1. Prepare the Coconut Filling: In a mixing bowl, combine the shredded coconut, melted coconut oil, powdered sugar, vanilla extract, and salt. Stir until the mixture is well combined and sticky, ensuring all ingredients are evenly incorporated.
  2. Shape the Filling: Roll the coconut mixture into small balls or spoon portions onto a parchment-lined tray. Flatten each ball slightly to form small discs, creating uniform pieces for easy chocolate coating.
  3. Chill: Place the coconut discs in the refrigerator for about 30 minutes to firm up, which will help them hold their shape during the coating process.
  4. Melt the Chocolate: While the coconut discs are chilling, melt the chocolate in a microwave-safe bowl in 30-second increments, stirring in between, or use a double boiler on low heat. Stir the chocolate until it’s completely smooth with no lumps.
  5. Coat the Coconut: Once the coconut discs have firmed up, dip each one into the melted chocolate to cover completely. Use a fork to lift them out, allowing excess chocolate to drip off, then place them back onto the parchment paper.
  6. Let the Chocolate Set: Allow the coated chocolates to set at room temperature or place them in the refrigerator until the chocolate hardens completely, about 15-20 minutes.
  7. Serve & Enjoy: After the chocolate is fully set, your Coconut Crème Chocolates are ready to be enjoyed. Store leftovers in an airtight container in the refrigerator.

Notes

  • For best results, use high-quality dark or semi-sweet chocolate for a rich coating.
  • You can adjust the sweetness by altering the amount of powdered sugar in the coconut filling.
  • Ensure the coconut discs are firm before dipping to prevent them from breaking apart.
  • Store the finished chocolates in the fridge to keep the coconut filling fresh and the chocolate coating firm.
  • To make them vegan, ensure your chocolate is dairy-free and use a vegan powdered sugar substitute if necessary.
