Ingredients
Scale
Coconut Filling
- 2 cups sweetened shredded coconut
- 1/4 cup coconut oil, melted
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
Chocolate Coating
- 8 oz dark chocolate or semi-sweet chocolate, for coating
Instructions
- Prepare the Coconut Filling: In a mixing bowl, combine the shredded coconut, melted coconut oil, powdered sugar, vanilla extract, and salt. Stir until the mixture is well combined and sticky, ensuring all ingredients are evenly incorporated.
- Shape the Filling: Roll the coconut mixture into small balls or spoon portions onto a parchment-lined tray. Flatten each ball slightly to form small discs, creating uniform pieces for easy chocolate coating.
- Chill: Place the coconut discs in the refrigerator for about 30 minutes to firm up, which will help them hold their shape during the coating process.
- Melt the Chocolate: While the coconut discs are chilling, melt the chocolate in a microwave-safe bowl in 30-second increments, stirring in between, or use a double boiler on low heat. Stir the chocolate until it’s completely smooth with no lumps.
- Coat the Coconut: Once the coconut discs have firmed up, dip each one into the melted chocolate to cover completely. Use a fork to lift them out, allowing excess chocolate to drip off, then place them back onto the parchment paper.
- Let the Chocolate Set: Allow the coated chocolates to set at room temperature or place them in the refrigerator until the chocolate hardens completely, about 15-20 minutes.
- Serve & Enjoy: After the chocolate is fully set, your Coconut Crème Chocolates are ready to be enjoyed. Store leftovers in an airtight container in the refrigerator.
Notes
- For best results, use high-quality dark or semi-sweet chocolate for a rich coating.
- You can adjust the sweetness by altering the amount of powdered sugar in the coconut filling.
- Ensure the coconut discs are firm before dipping to prevent them from breaking apart.
- Store the finished chocolates in the fridge to keep the coconut filling fresh and the chocolate coating firm.
- To make them vegan, ensure your chocolate is dairy-free and use a vegan powdered sugar substitute if necessary.
