Ingredients
Scale
Ingredients
- 3 large eggs, separated
- 3 oz (85g) cream cheese, softened
- 1/4 teaspoon cream of tartar
- 1 tablespoon honey (optional)
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder (optional, for fluffier bread)
Instructions
- Preheat the oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper to prevent sticking.
- Whisk the egg whites: In a clean, dry bowl, beat the egg whites and cream of tartar with an electric mixer until stiff peaks form. This will take about 3-5 minutes and is essential for giving the bread its airy texture.
- Mix the egg yolks: In another bowl, whisk together the egg yolks, softened cream cheese, honey (if using), salt, and baking powder (if using) until smooth and fully combined.
- Combine the mixtures: Gently fold the whipped egg whites into the egg yolk mixture. Be careful to fold slowly to maintain the airiness and avoid deflating the egg whites until fully incorporated.
- Shape the bread: Use a spoon or spatula to drop spoonfuls of the batter onto the prepared baking sheet, shaping them into rounds or ovals about 3 inches in diameter. You should get about 6-8 pieces.
- Bake the cloud bread: Bake in the preheated oven for 25-30 minutes or until the breads are golden brown and firm to the touch. If they brown too quickly, loosely cover with foil to prevent burning.
- Cool and serve: Remove from the oven and allow the cloud breads to cool completely on a wire rack. Serve as a sandwich base or with your favorite spreads. Enjoy!
Notes
- For fluffier bread, add 1/4 teaspoon of baking powder as suggested.
- Honey is optional and adds a touch of sweetness, which can be omitted for a low-sugar version.
- Make sure to beat the egg whites until stiff peaks form to achieve the light texture.
- Cooling the bread completely helps it set and improves texture.
- Can be stored in an airtight container in the refrigerator for up to 2 days.
