Description

Light and fluffy Cloud Bread made with eggs and cream cheese, perfect as a low-carb, gluten-free alternative to traditional bread. This recipe creates soft, airy rounds that are great for sandwiches or enjoying with your favorite spreads.

Ingredients

Scale

Ingredients

  • 3 large eggs, separated
  • 3 oz (85g) cream cheese, softened
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon honey (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder (optional, for fluffier bread)

Instructions

  1. Preheat the oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Whisk the egg whites: In a clean, dry bowl, beat the egg whites and cream of tartar with an electric mixer until stiff peaks form. This will take about 3-5 minutes and is essential for giving the bread its airy texture.
  3. Mix the egg yolks: In another bowl, whisk together the egg yolks, softened cream cheese, honey (if using), salt, and baking powder (if using) until smooth and fully combined.
  4. Combine the mixtures: Gently fold the whipped egg whites into the egg yolk mixture. Be careful to fold slowly to maintain the airiness and avoid deflating the egg whites until fully incorporated.
  5. Shape the bread: Use a spoon or spatula to drop spoonfuls of the batter onto the prepared baking sheet, shaping them into rounds or ovals about 3 inches in diameter. You should get about 6-8 pieces.
  6. Bake the cloud bread: Bake in the preheated oven for 25-30 minutes or until the breads are golden brown and firm to the touch. If they brown too quickly, loosely cover with foil to prevent burning.
  7. Cool and serve: Remove from the oven and allow the cloud breads to cool completely on a wire rack. Serve as a sandwich base or with your favorite spreads. Enjoy!

Notes

  • For fluffier bread, add 1/4 teaspoon of baking powder as suggested.
  • Honey is optional and adds a touch of sweetness, which can be omitted for a low-sugar version.
  • Make sure to beat the egg whites until stiff peaks form to achieve the light texture.
  • Cooling the bread completely helps it set and improves texture.
  • Can be stored in an airtight container in the refrigerator for up to 2 days.
