Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces or shredded
  • 1 (4 oz) can diced green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 (15 oz) cans great northern or cannellini beans, drained and rinsed
  • 3 cups low-sodium chicken broth
  • 1/2 cup sour cream
  • 1/2 cup heavy cream or half-and-half
  • juice of 1 lime
  • chopped fresh cilantro and shredded cheese for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened.
  2. Stir in garlic and cook until fragrant. Add chicken and cook until no longer pink.
  3. Stir in green chilies, cumin, oregano, chili powder, coriander, salt, and pepper.
  4. Add beans and chicken broth, simmer for 15–20 minutes.
  5. Reduce heat, stir in sour cream, heavy cream, and lime juice. Simmer for 5 more minutes.
  6. Taste and adjust seasoning. Serve hot, garnished with cilantro and cheese.

Notes

  • For extra creaminess, mash a portion of the beans before adding.
  • You can use rotisserie chicken to save time.
  • Serve with tortilla chips or warm cornbread.
