- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces or shredded
- 1 (4 oz) can diced green chilies
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 (15 oz) cans great northern or cannellini beans, drained and rinsed
- 3 cups low-sodium chicken broth
- 1/2 cup sour cream
- 1/2 cup heavy cream or half-and-half
- juice of 1 lime
- chopped fresh cilantro and shredded cheese for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened.
- Stir in garlic and cook until fragrant. Add chicken and cook until no longer pink.
- Stir in green chilies, cumin, oregano, chili powder, coriander, salt, and pepper.
- Add beans and chicken broth, simmer for 15–20 minutes.
- Reduce heat, stir in sour cream, heavy cream, and lime juice. Simmer for 5 more minutes.
- Taste and adjust seasoning. Serve hot, garnished with cilantro and cheese.
Notes
- For extra creaminess, mash a portion of the beans before adding.
- You can use rotisserie chicken to save time.
- Serve with tortilla chips or warm cornbread.
