Scale
Vegetables
- 4 large carrots, peeled
- 1 small cucumber, seeds removed
Dressing
- 1 lemon, zest and juice
- 1 orange, zest and juice
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon honey
- Salt, to taste
- Freshly ground black pepper, to taste
Herbs and Garnish
- 2 tablespoons fresh mint leaves, chopped
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons roasted pistachios or almonds, chopped (optional)
Instructions
- Prepare vegetable ribbons: Use a vegetable peeler to shave the peeled carrots and seed-removed cucumber into long, thin ribbons. Place these ribbons into a large salad bowl.
- Make citrus dressing: In a small bowl, whisk together the lemon juice, orange juice, lemon and orange zest, extra-virgin olive oil, honey, salt, and black pepper until the dressing is well combined and emulsified.
- Combine and toss: Pour the citrus dressing over the carrot and cucumber ribbons in the salad bowl. Add the chopped fresh mint and parsley, then gently toss everything together to ensure all vegetables are evenly coated with the dressing.
- Adjust seasoning: Taste the salad and adjust salt and pepper as needed to match your preference.
- Serve with garnish: Transfer the salad to a serving platter or individual plates. Sprinkle the chopped roasted pistachios or almonds on top for a crunchy garnish if desired. Serve immediately for the freshest taste.
Notes
- Use a vegetable peeler to create ribbons that add texture and visual appeal to the salad.
- Roasted pistachios or almonds add a delightful crunch but can be omitted for a nut-free option.
- This salad is best served immediately to keep the ribbons crisp and fresh.
- For a vegan variation, replace honey with maple syrup or agave nectar.
- Adjust the citrus juice amounts depending on the sweetness and tartness of your lemons and oranges.
