For the Toffee:
- 40 saltine crackers
- 1 cup unsalted butter
- 1 cup light brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
For Topping:
- 1 cup white chocolate chips
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat Oven: Preheat oven to 400°F and line a 9×13-inch baking sheet with parchment paper or foil. Arrange saltine crackers in a single layer.
- Make Toffee: In a saucepan over medium heat, melt butter and brown sugar until boiling. Boil for 3 minutes, then remove from heat. Stir in vanilla, cinnamon, and salt. Pour over saltines and spread.
- Bake: Bake for 5 minutes. Remove from oven and sprinkle white chocolate chips over hot toffee. Spread once softened.
- Add Topping: Mix granulated sugar and cinnamon in a bowl. Sprinkle over white chocolate. Let cool, then refrigerate.
- Serve: Once set, break into pieces and enjoy!
Notes
- For a variation, drizzle melted dark chocolate over the top before adding the cinnamon sugar.
- Store in the fridge for up to a week in an airtight container.
