- 1 ½ cups whole milk
- 1 cup heavy cream
- ¾ cup granulated sugar
- 3 large eggs
- 1 tablespoon cornstarch
- 1 tablespoon unsalted butter
- 1 tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ground nutmeg for topping (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F.
- Prepare the crust: Place the pie crust into a 9-inch pie dish and crimp the edges.
- Make the custard: In a medium saucepan, combine milk and cream. Heat over medium until warm but not boiling.
- Prepare the filling: In a mixing bowl, whisk together sugar, eggs, cornstarch, vanilla extract, cinnamon, and salt until smooth.
- Combine mixtures: Slowly pour the warm milk mixture into the egg mixture, whisking constantly to temper the eggs.
- Fill the pie: Pour the custard mixture into the prepared pie crust. Dot with butter pieces.
- Bake: Bake for 45–50 minutes, or until the edges are set and the center is slightly jiggly.
- Cool and chill: Let the pie cool at room temperature, then refrigerate for at least 4 hours before serving.
- Serve: Sprinkle with nutmeg just before serving if desired.

- For a deeper flavor, use a cinnamon stick in the milk while warming and remove it before combining with the egg mixture.
