Description

Delight in these easy-to-make Chocolate Frozen Raspberries, combining fresh raspberries coated in luscious vanilla yogurt and rich chocolate for a refreshing and indulgent treat perfect for any occasion.

Ingredients

Scale

Yogurt Coating

  • 28 fresh raspberries
  • 1/3 cup vanilla yogurt (e.g., Siggi’s 4%)

Chocolate Coating

  • 1/2 cup dark chocolate chips (e.g., Lily’s dark chocolate chips)
  • 2 tsp coconut oil
  • 28 fresh raspberries
  • 1/2 cup white chocolate chips (e.g., Lily’s white chocolate chips)
  • 1/2 cup dark chocolate chips
  • 4 tsp coconut oil, divided

Instructions

  1. Prepare Yogurt-Coated Raspberries: Gently dip each of the 28 fresh raspberries into the vanilla yogurt, ensuring they are evenly coated. Place the coated raspberries on a baking sheet lined with parchment paper and freeze for about 1 hour until the yogurt is firm.
  2. Melt Dark Chocolate for Coating: In a microwave-safe bowl, combine 1/2 cup of dark chocolate chips with 2 teaspoons of coconut oil. Microwave in 30-second intervals, stirring between each until smooth and fully melted.
  3. Dip Yogurt-Coated Raspberries into Dark Chocolate: Remove the yogurt-coated raspberries from the freezer and carefully dip each one into the melted dark chocolate mixture, coating completely. Place back on parchment paper and freeze until set.
  4. Melt White and Dark Chocolate for Additional Coating: In a separate bowl, combine 1/2 cup white chocolate chips with 1/2 cup dark chocolate chips and 4 teaspoons of coconut oil (divided). Melt the mixture carefully using the microwave or double boiler, stirring until smooth.
  5. Dip Fresh Raspberries into Mixed Chocolate: Dip the remaining 28 fresh raspberries into the mixed white and dark chocolate mixture, ensuring full coverage. Place on parchment paper and freeze to set the chocolate layer.

Notes

  • Use fresh, firm raspberries for best results.
  • Ensure the melted chocolate is smooth and not overheated to avoid grittiness.
  • Freezing time may vary depending on your freezer; the raspberries should be firm before serving.
  • Store the finished chocolate-frozen raspberries in an airtight container in the freezer for up to 1 week.
