Description

Pie Crust:

  • 1 (9-inch) prepared graham cracker or pastry pie crust

Filling:

  • 1 1/2 cups whole milk ricotta cheese
  • 8 oz mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 3/4 cup mini chocolate chips
  • additional mini chocolate chips and powdered sugar for garnish (optional)


Instructions

  1. In a large bowl, beat together the ricotta, mascarpone, powdered sugar, granulated sugar, vanilla extract, and cinnamon (if using) until smooth and creamy.
  2. Fold in the mini chocolate chips.
  3. Spoon the filling into the prepared crust and smooth the top.
  4. Cover and refrigerate for at least 4 hours, or overnight, until set.
  5. Before serving, sprinkle with extra chocolate chips and a dusting of powdered sugar if desired.

Notes

  • For best texture, drain the ricotta in a fine mesh strainer or cheesecloth for a few hours before using.
