Instructions
- Preheat & Prep: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and promote even baking.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. This ensures that the leavening agents and spices are evenly distributed throughout the dough.
- Cream Butter & Sugar: In a large bowl, beat the softened butter with brown sugar and granulated sugar until the mixture is light and fluffy, creating a good base for the cookies.
- Add Wet Ingredients: Mix in the egg and vanilla extract until fully combined. Then stir in the mashed banana until the entire mixture is smooth and evenly blended.
- Combine & Fold: Gradually add the dry ingredients to the wet mixture, mixing just until combined to avoid overworking the dough. Gently fold in the semi-sweet chocolate chips to distribute them evenly.
- Scoop & Bake: Use a tablespoon to drop evenly sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow room for spreading.
- Bake & Cool: Bake the cookies for 10-12 minutes, until the edges turn lightly golden. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
