For the Chicken Tinga:

  • 1 tablespoon olive oil
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1–2 chipotle peppers in adobo sauce, chopped
  • 1 teaspoon adobo sauce (from the can)
  • 1 can (15 oz) diced tomatoes or 4 medium Roma tomatoes, blended
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups cooked and shredded chicken (such as rotisserie)
  • 1/4 cup chicken broth or water

Instructions

  1. Heat olive oil: In a large skillet over medium heat, add olive oil.
  2. Cook onion and garlic: Add sliced onion and cook until soft. Stir in garlic.
  3. Add seasonings and tomatoes: Add chipotle peppers, adobo sauce, blended tomatoes, oregano, cumin, salt, and pepper. Simmer.
  4. Combine with chicken: Add shredded chicken and broth. Simmer until heated through.
  5. Adjust seasoning: Taste and adjust seasoning as needed.
