Chicken Souvlaki:
- 1 ½ lbs boneless, skinless chicken breasts or thighs (cut into 1-inch cubes)
- ¼ cup olive oil
- 3 tablespoons fresh lemon juice
- 3 cloves garlic (minced)
- 1 tablespoon red wine vinegar
- 2 teaspoons dried oregano
- ½ teaspoon salt
- ½ teaspoon black pepper

Instructions
- Marinate the chicken: In a bowl, mix olive oil, lemon juice, garlic, red wine vinegar, oregano, salt, and pepper. Add chicken cubes, coat well, cover, and refrigerate for at least 1 hour.
- Skewer and grill: Thread marinated chicken onto skewers. Grill over medium-high heat for 10-12 minutes, turning occasionally until cooked through.
