  • 1 teaspoon salt, divided
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons olive oil

For the Rice:

  • ½ cup unsalted butter, divided
  • 2 tablespoons minced garlic
  • ¼ teaspoon crushed red pepper flakes
  • ½ cup dry white wine
  • 1½ cups uncooked long-grain white rice
  • 3 cups chicken broth
  • ½ cup freshly grated Parmesan cheese
  • Optional: chopped fresh parsley and toasted breadcrumbs for garnish

Instructions

  1. Season the Chicken: Season chicken with ½ teaspoon salt, black pepper, and garlic powder.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Cook chicken for 3–4 minutes per side until golden and cooked through; remove from skillet and keep warm.
  3. Prepare the Sauce: In the same skillet, melt half the butter, then add garlic, crushed red pepper, and remaining salt; sauté until fragrant. Increase heat, pour in wine, and simmer until reduced by half. Reserve 2 tablespoons of sauce for finishing.
  4. Cook the Rice: Stir uncooked rice into skillet, coating with the sauce. Add chicken broth, bring to a boil, then reduce heat to low, cover, and cook for 15–20 minutes until rice is tender. Stir in Parmesan cheese.
  5. Combine and Garnish: Return chicken to skillet on top of rice, drizzle with reserved sauce, cover, and let rest for 5 minutes. Garnish with parsley and breadcrumbs if desired.

Notes

  • For a non-alcoholic version, replace wine with ½ cup chicken broth plus 1 tablespoon lemon juice.
  • Jasmine rice or orzo pasta can be substituted for long-grain rice.
