Description

These Chicken Piccata Meatballs are a delightful twist on the classic chicken piccata dish, combining tender ground chicken with the tangy flavors of lemon and capers. Perfect for a quick and flavorful weeknight dinner.

Ingredients

Scale

For the meatballs:

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for cooking)

For the sauce:

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers, drained
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
  • Chopped parsley and lemon slices for garnish

Instructions

  1. Prepare the meatballs: In a large bowl, mix ground chicken, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper. Shape into 1-inch meatballs. Cook in olive oil until browned and cooked through.
  2. Make the sauce: In the same skillet, sauté garlic in butter. Add chicken broth, lemon juice, and capers. Simmer, then thicken with cornstarch slurry if desired.
  3. Combine and simmer: Return meatballs to the skillet, simmer to absorb flavors. Garnish with parsley and lemon slices before serving.

Notes

  • Serve over angel hair pasta, mashed potatoes, or rice.
  • Substitute turkey or pork for the ground chicken.
  • For a gluten-free version, use almond flour and gluten-free breadcrumbs.
