Cake:
- 1 box chocolate cake mix
- 1 cup Dr Pepper (regular, not diet)
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract (optional)
- 1 cup chopped maraschino cherries
- 1/4 cup maraschino cherry juice
Frosting:
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 2–3 tablespoons maraschino cherry juice
- 1/2 teaspoon vanilla or almond extract
- pinch of salt
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Mix the cake: In a large bowl, combine the cake mix, Dr Pepper, oil, eggs, extracts, cherry juice, and chopped cherries. Mix well and pour into the pan.
- Bake: Bake for 30–35 minutes until a toothpick inserted comes out clean. Cool the cake.
- Make the frosting: Beat butter until fluffy, then add sugar, cherry juice, extract, and salt. Spread over the cooled cake.
- Serve: Top with extra cherries and slice to serve.
