Cake:

  • 1 box chocolate cake mix
  • 1 cup Dr Pepper (regular, not diet)
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1 cup chopped maraschino cherries
  • 1/4 cup maraschino cherry juice

Frosting:

  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 23 tablespoons maraschino cherry juice
  • 1/2 teaspoon vanilla or almond extract
  • pinch of salt

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Mix the cake: In a large bowl, combine the cake mix, Dr Pepper, oil, eggs, extracts, cherry juice, and chopped cherries. Mix well and pour into the pan.
  3. Bake: Bake for 30–35 minutes until a toothpick inserted comes out clean. Cool the cake.
  4. Make the frosting: Beat butter until fluffy, then add sugar, cherry juice, extract, and salt. Spread over the cooled cake.
  5. Serve: Top with extra cherries and slice to serve.
