Instructions
- Prepare the cream cheese mixture: In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla extract until the mixture is smooth and creamy.
- Position the egg roll wrapper: Lay one egg roll wrapper flat on your surface with a corner pointing towards you, creating a diamond shape.
- Add the filling: Spread about 1 tablespoon of the cream cheese mixture in the center of the wrapper, then top it with 1 tablespoon of cherry pie filling.
- Roll the egg rolls: Fold the bottom corner of the wrapper up and over the filling, then fold in the sides tightly. Continue rolling upwards to enclose the filling and seal the edge with a small amount of water to keep it closed.
- Repeat filling and rolling: Repeat the filling and rolling process with the remaining wrappers and filling until all are assembled.
- Fry the egg rolls (optional): Heat vegetable oil in a deep pan to 350°F (175°C). Fry 2-3 egg rolls at a time for about 2–3 minutes per side, or until they turn a deep golden brown. Remove and drain on paper towels to absorb excess oil.
- Bake the egg rolls (alternative): Preheat oven to 400°F (200°C). Place the egg rolls on a parchment-lined baking sheet and spray them lightly with oil. Bake for 12–15 minutes, turning halfway through, until golden and crisp on all sides.
