Instructions
- Prepare the filling: In a mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy, ensuring no lumps remain.
- Assemble the egg rolls: Lay one egg roll wrapper flat on a clean surface with a corner pointing towards you. Spoon 2 tablespoons of the cream cheese mixture in the center, then add 1 tablespoon of cherry pie filling on top.
- Fold and seal: Fold the bottom corner over the filling, then fold in the sides snugly. Brush the top corner with beaten egg to act as glue, then tightly roll it up to seal the egg roll. Repeat for all wrappers.
