- 2 cups cooked chicken breast, shredded (about 2 medium chicken breasts)
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
Pasta
- 12 oz spaghetti (or pasta of your choice)
Vegetables and Aromatics
- 1 small onion, diced
- 1 bell pepper, diced
Liquids and Oils
- 1 tablespoon olive oil
- 1 cup chicken broth
Spices and Seasonings
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper, to taste
Instructions
- Cook the spaghetti: Cook the pasta according to the package instructions until al dente. Drain the pasta thoroughly and set it aside to cool slightly.
- Sauté the vegetables: Heat olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, then sauté for 3-4 minutes until the vegetables have softened and become fragrant.
- Prepare the sauce: In a separate mixing bowl, combine the cream of chicken soup, sour cream, and chicken broth. Whisk the mixture well until smooth and thoroughly blended.
- Combine pasta and sauce: Add the cooked spaghetti and shredded chicken to the skillet with the sautéed vegetables, and pour the prepared sauce over the top. Stir everything until the pasta is evenly coated and all ingredients are well incorporated.
- Add seasonings and cheese: Sprinkle the garlic powder, onion powder, paprika, salt, and pepper into the mixture. Mix thoroughly. Then stir in 1 1/2 cups of the shredded cheddar cheese and all the mozzarella cheese, saving 1/2 cup of cheddar for topping.
- Assemble and bake: Transfer the cheesy chicken spaghetti mixture to a greased baking dish. Evenly sprinkle the remaining 1/2 cup shredded cheddar cheese over the top. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until the cheese topping is melted, bubbly, and lightly golden.
- Serve: Remove from the oven and let the dish cool for a few minutes before serving hot. Enjoy your creamy, cheesy chicken spaghetti!
