Instructions
- Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for 2–3 minutes until they become fragrant and softened, creating the flavor base for the soup.
- Cook Vegetables: Add the chopped carrots and tomatoes to the pot. Season with salt and pepper. Cook for another 5 minutes, stirring occasionally to combine the flavors and slightly soften the vegetables.
- Add Broth and Simmer: Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat, cover the pot, and let it simmer gently for 20–25 minutes, or until the carrots are tender and fully cooked.
- Blend Soup: Using an immersion blender, puree the soup directly in the pot until smooth. Alternatively, carefully transfer the soup in batches to a regular blender and blend until velvety smooth. Return the soup to the pot if using a blender.
- Adjust and Serve: Taste the soup and adjust seasoning if necessary. Serve the hot soup as is, or optionally add a splash of coconut milk or heavy cream for extra creaminess. Enjoy with grilled cheese or crusty bread on the side.
