Pie Crust:

Roasted Onions and Carrots:

  • 1 tablespoon olive oil
  • 1 medium yellow onion, thinly sliced
  • 1 ½ cups shredded carrots

Egg Mixture:

  • 4 large eggs
  • 1 cup whole milk
  • ½ cup heavy cream
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C). Place the pie crust in a 9-inch tart or pie pan.
  2. Caramelize Onions: Heat olive oil in a skillet, add onions, and cook until golden. Add carrots and cook until softened. Cool slightly.
  3. Prepare Filling: Whisk eggs, milk, cream, salt, pepper, nutmeg. Add cheddar, fold in carrot-onion mix. Pour into crust.
