Pie Crust:
- 1 9-inch pie crust (homemade or store-bought)
Roasted Onions and Carrots:
- 1 tablespoon olive oil
- 1 medium yellow onion, thinly sliced
- 1 ½ cups shredded carrots
Egg Mixture:
- 4 large eggs
- 1 cup whole milk
- ½ cup heavy cream
- 1 ½ cups shredded sharp cheddar cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon ground nutmeg
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C). Place the pie crust in a 9-inch tart or pie pan.
- Caramelize Onions: Heat olive oil in a skillet, add onions, and cook until golden. Add carrots and cook until softened. Cool slightly.
- Prepare Filling: Whisk eggs, milk, cream, salt, pepper, nutmeg. Add cheddar, fold in carrot-onion mix. Pour into crust.
- Bake: Bake for 40–45 minutes until set. Cool before slicing. Garnish with parsley.
