Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mix Wet Ingredients: In a large bowl, whisk together eggs, oil, brown sugar, granulated sugar, and vanilla. Stir in grated carrot, zucchini, and apple.
- Combine Dry Ingredients: In a separate bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Fold dry ingredients into wet mixture. Add nuts if using.
- Bake: Pour batter into the loaf pan and bake for 50–60 minutes until a toothpick comes out clean. Cool before serving.
