- Egg wash (1 egg whisked with a teaspoon of water)
Instructions
- Prepare the Pastry: Roll out your rough puff or classic puff pastry on a lightly floured surface until about ¼ inch thick. Cut the pastry into 12 equal pieces, suitable for individual tarts. Place them on a parchment-lined baking sheet.
- Caramelize the Onions: Heat olive oil in a wide skillet over medium-low heat. Add the thinly sliced onions and sprinkle with salt. Cook slowly, stirring occasionally, until the onions turn a deep golden brown and become very soft, approximately 40-50 minutes. Towards the end, stir in the balsamic vinegar to add a touch of acidity and depth.
- Assemble the Tarts: Preheat your oven to 400°F (200°C). Brush the edges of each pastry piece with the egg wash. Evenly distribute the caramelized onions over the pastry squares, leaving a small border around the edges. Sprinkle the crumbled feta on top of the onions.
- Bake: Bake the tarts in the preheated oven for about 15-20 minutes, or until the pastry is puffed and golden and the feta is warmed through.
- Garnish and Serve: Remove the tarts from the oven and let them cool slightly. Sprinkle the finely sliced chives over the top for a fresh, mild onion flavor. Serve warm or at room temperature.
